Chocolate Mochi Chocolate Chips Cookie Recipe

Chocolate mochi cookies are made from the same basic ingredients. The dry ingredients consist of flour, baking powder, baking soda, and salt.

1. First, we need to make mochi.

Microwave method.

  1. Combine the glutinous rice flour, sugar, and milk in a large microwave-safe bowl and cover with plastic wrap. Microwave for 1 minute.
  2. Stir the glutinous rice flour mixture with a whisk to get rid of any lumps, then recover with plastic wrap and microwave again for 1 minute.
  3. Dip a rubber spatula in water and stir the rice mixture again. Don’t use your whisk this time, as the dough will now be very sticky.
  4. Cover the mixture one last time and microwave for another 30 seconds.
  5. After that, add 8g of unsalted butter to the mochi and knead it then cool them to room temperature.

Steam method

  1. Combine the glutinous rice flour, sugar, and milk in a bowl and cover with plastic wrap. Steam it for 15 minutes.
  2. After that, add 8g of unsalted butter to the mochi and knead it then cool them to room temperature.

2. Soften the butter at room temperature. Add the sugar to the butter.

3. Whisk it about 2 minutes until it become whiter than before and increase in volume.

4. Sift cake flour and cocoa powder to the butter mix.

5. Mix well.

6. Add an egg to the semifinished cookie dough.

7. After mixing, divide into small doses of 20 grams each.

8. Put 10g of mochi on the dough.

9. Put some chocolate chips on it.

10. Preheat the oven and bake them at 170°C for 20 minutes.

11. Put the baked cookies on the rack and let cool.
